Zerde, also known as “lined rice pudding”, is a dessert prepared with milk, rice and haspir. Optionally, turmeric or saffron can be used instead of haspir.
Ingredients for Zerde (Lined Rice Pudding) Recipe
For Zerde
- 1 glass of rice
- 4 glasses of granulated sugar
- 14 glasses of water
- 1 tablespoon of haspir (can also be saffron or turmeric)
- Geranium leaf
For rice pudding
- 1 liter milk
- ¹ coffee cup rice
- 1 glass of granulated sugar
How to Make Zerde (Lined Rice Pudding)?
For rice pudding, wash the rice with plenty of water and drain the water. Add enough water to cover it in the pot and boil it until it is soft. Add the milk and continue cooking. When the mixture starts to thicken slightly, add sugar and mix. Share the rice pudding halfway through the bowls. Wash the rice with plenty of water and drain the water. Add half a glass of sugar and 14 glasses of water and put it in a pot. Cook over medium heat until the rice is soft. Put the haspir in the pan, add enough water to cover it and boil it. Filter the water through the gauze.
Wrap 5-6 pelargonium leaves in a piece of cheesecloth and add it to the pan with rice. Cook for 15 minutes and remove the pelargonium leaves from the pot. Add the remaining sugar and mix. Share on rice puddings. Cool and serve.
