Ingredients for Pumpkin Muffin Recipe

  • 2 eggs
  • ¹ cup of granulated sugar
  • 1 tea glass of milk
  • 1 teacup of oil
  • 200 g pumpkin puree
  • 1 teaspoon of cinnamon
  • 2 cups flour
  • 1 packet of baking powder
  • 1 tablespoon of cocoa

For the cream:

  • 200 g pumpkin puree
  • 1 pack of whipped cream
  • 1 glass of cold milk
  • 2 tablespoons of powdered sugar

For the above:

  • Ground cinnamon

How to Make Pumpkin Muffins?

  1. In a mixing bowl, whisk the eggs and sugar well. Add the milk and oil and continue mixing. Add the sifted flour, cinnamon and baking powder and mix well. Divide the mixture in half and add the pumpkin puree to the other half.
  2. Take a spoon of each dough and divide it so that the muffin molds are three quarters full. Bake in a preheated 170 degree oven for 20 minutes. Take it from the oven and cool on the wire rack.
  3. For the cream, whisk the whipped cream with cold milk. Add the pumpkin puree and powdered sugar and mix well. Refrigerate until the muffins are cooked. Transfer the cream into a squeeze bag. When the cake cools down, squeeze out the pumpkin cream and sprinkle cinnamon and serve.
