Linzer Cookie Recipe


For the cookie:

-225 grams of unsalted butter (at room temperature)
-1/2 cup of sugar
-2 cups (1/2 more cup)
-1/2 cup almond flour
-1 grated lemon peel
-1 egg yolk
-1 packet of vanilla
-1 bowl of cherry marmalade (to rub in between)
-1 teaspoon powdered sugar (to sprinkle on top)

For jelly:

-1 glass of cherry juice
-2 tablespoons of starch
-3 tablespoons of sugar

How to Make Linzer Cookie Recipe?

Prepare the cherry jelly in the pot.
Whisk the sugar and butter until well creamy.
Add the egg yolk and whisk a little more.
Sift the dry ingredients and add to the mixture in two times and blend into the dough.
Stretch the dough and lift it to rest in the fridge for 1 hour.
Open it on the floured counter with the help of a roller.
Cut the dough with the cookie shapers and place them on the baking tray.
Leave it in the freezer for 15 minutes to keep its shape while cooking.
Bake in a preheated 175 ° oven for 10-15 minutes.
