Cornes de Gazelle (Gazelle Horn) Recipe
For this famous dessert, which means “gazelle horn” in Morocco, the doughs are filled with crushed almonds flavored with orange blossom. Powdered sugar is sprinkled on the desserts after they are cooked.
Materials:
For the dough
- 250 g flour
- 100 g butter
- 2 spoons of sugar
- 1 egg
- 2-3 tablespoons of orange blossom flavor
- 1 pinch of salt
Inner material
- 125 gr almonds, (boil on robot, peel and fine grind)
- 60 g sugar
- 1 tablespoon of orange blossom flavor
Honey syrup
- 600 g sugar
- 300 ml water
- Juice of 1/2 lemon
- 2 tablespoons of honey
Method:
Instead of orange flower aroma, you can put rose aroma, or you can try it plain. I usually make arabic cakes with the aromas of rose or orange flowers to match the original.
Make the dough, cut it in circles. Shape the boiled almonds, peeled and robotized, by adding aroma and sugar to them and putting them into a moon shape. Lay it on a baking tray on which we spread greaseproof paper. Cook it in a preheated 200 ° oven until it dries for 15 minutes. After it cools down, we either apply honey syrup on it or what we find powdered sugar.
