This time, we came up with the Medovik Pasta recipe, also known as “Russian cake” and “honey cake”, which is very famous in Russia and Eastern Europe. Medovik is a delicious cake filled with cream in between, prepared with honey dough and cooked by opening each layer one by one. Although it may seem troublesome to make, the result is definitely worth a try.

First, we prepare the thin honey biscuits. We cook each for five minutes and leave it to warm. While waiting for the biscuits to warm, we prepare our slightly fluid, yet delicious cream. When we say a biscuit is a cream, we go up eight layers, decorate it with biscuit crumbs, rest in the refrigerator and consume it with pleasure.


Ingredients for the Medovik Cake Recipe

  • 2 spoonful butter
  • 3 eggs
  • 1/2 cup of sugar
  • 1/2 cup honey
  • 3 cups flour
  • 1 packet of baking powder

For the cream:

  • 1/2 cup powdered sugar
  • 2 cups of whipped cream
  • 250 grams of brown cheese

If you melt butter and sugar at low temperatures, you will prevent the sugar from caramelizing and sticking to the bottom. When you lay out the biscuits you bake in layers, if you cover each biscuit first with cream and then arrange it, you will prevent the cream from extinguishing.


Cooking Suggestion of Medovik Cake Recipe

You can prepare the filling cream with sour cream and sugar as in the original recipe, or you can use pastry cream or cream you prepare at home as a cake filling.


How to Make Medovik Cake Recipe?

Put the butter, sugar and honey in a pot, melt over low heat and leave to warm.

Whisk the eggs in a separate bowl with a fork, add to the warmed butter-sugar mixture and mix well with a wire whisk.

Add the baking powder.

Sift the flour and add ½ cup each time and feed into the mixture. Mix well until you have a light-sticky dough.

Cut your dough into 8 equal parts and roll out each piece with a roller on the floor where you sprinkle flour. Cut the dough you rolled into circles using the bottom of the 9-10 cm cake mold.

Place your round dough and the pieces that come out from the edges on a tray on which you laid oily paper, bake in a preheated 180 degree oven for 5 minutes and leave to warm.

Whisk the cream well with the sugar, then add the labne cheese and prepare the cream.

Arrange the dissolving biscuits neatly on top of each other, with cream between them.

Cover your cake with cream on the sides or just on it.

Decorate your cake by powdering the side pieces you baked. After resting in the refrigerator, enjoy it by decorating it with fruits.
