The leaf litter cake strudel is quite similar to the strudel cake, since the strudel is only dulce de leche, the differences are mainly in the filling. Instead, he sprinkles whipped cream or meringue on the dulce de leche filling, which we will prepare later. Chopped walnuts and orange or lemon zest are often added to the garbage cake recipe to give the cookies a citrus touch.
The taste of this garbage is better when there is waiting time, as the cookie absorbs moisture from the cream and softens it. For the cookie
- 400 grams of flour
- 4 units of yolks
- 100 grams of butter
- 1 cup of milk (240 milliliters)
- ¹ pinch of salt
- 1 tablespoon rum or pisco (optional)
- 1 unit of orange or lemon zest (optional)

- 500 grams of delicacy
- 1 cup of powdered sugar
- 500 milliliters of heavy cream (cream)
How to make Litter Cake:
Sift the flour together with it into a large bowl, add the butter and the yolks. Blend until large, smooth lumps.
Tip: preheat the oven to 180 ° C to save time.
Add the milk little by little and knead. Add milk until you get a dough that is not sticky and smooth. You may not use it all.
Roll out the dough with the help of a rolling pin, leaving it quite thin, about 2 millimeters thick. Cut circles of the size you want to make the cake, keep in mind that if you cut small it will be higher, while if you cut large it will have fewer layers.
Bake the cookie layers for 4 or 7 minutes each, this will depend on the power of your oven. They should be golden brown, but not toasted. When you think they are ready, you can taste the dough, it should be firm but not hard. Let them rest until they are totally cool.
While the cookies rest, begin to beat the milk cream together with the powdered sugar or icing sugar until it takes on volume and is a little firmer.
Start filling the cookies with delicacy, you can do it in a mold or on top of the presentation plate. Cover both sides of the first cookie with dulce de leche. This will be the base of our cake, so it will be fixed to the plate and will not move too much when you serve it.
Glue the second cookie on top of the delicacy and cover it with the whipped cream.
