Caramel Sticky Cake Recipe

Ingredients for Date Cake Recipe

  • 3 eggs
  • 3/4 cup powdered sugar
  • 1/2 cup yogurt (or cream)
  • 1/2 cup olive oil
  • 10 large (meaty) dates
  • 1/2 cup finely ground almonds
  • 1 teaspoon of cinnamon
  • 1 tablespoon cocoa
  • 3 cups flour
  • 1 packet of baking powder

For caramel cream:

  • 3/4 cup powdered sugar
  • 2 tablespoons of water
  • 3 drops lemon juice
  • 100 ml liquid cream
  • 100 grams of butter

Use room temperature eggs. Add other liquid ingredients to the eggs that have a creamy consistency with the addition of granulated sugar.

How to Make Date Cake Recipe?

To prepare caramel cream; Put granulated sugar, water and freshly squeezed lemon juice in a deep sauce bowl. Without mixing the melting powdered sugar, shake the sauce container in between to caramelize the sugar. Be careful not to burn sugar in high heat.

Add cream to the caramel mixture, which becomes darker in color and you continue to cook on low heat, and mix quickly.

Take the caramel mixture that you cook for 2-3 more minutes on low heat. Pour into a hot glass or ceramic jar and let stand briefly. Then, whisk it with cold butter and make it creamy. Keep in the fridge.

Before making a cake, cut the seeds you have removed into small cubes.

For the date cake; Put the egg and powdered sugar in the mixing bowl. Mix it with a mixer until it becomes creamy.

After adding the yogurt and olive oil, continue mixing.

Mix the sifted flour, baking powder, finely ground almond kernels, cinnamon and cocoa in a separate bowl and add to the whipped liquid ingredients.

Finally, add lightly floured date cubes to the mixed and thickened cake mixture.

Pour the cake mortar you have prepared into a lightly floured cake mold or baking tray, greased with butter. Smooth it with a spatula.

Bake in a preheated 170 degree oven for 35 minutes. Take the cake, which is sucked in at the oven temperature and rested for a short time, to the serving plate by turning it upside down.

After you cover it with caramel cream you have prepared and slice it, share it with your loved ones.
